Green Split Pea Dip

A greek classic side dish made from green split peas which is a lovely alternative to hummus. I like to have this in the fridge to snack on with carrots and celery as it lasts for a week in an air tight container. Serve it up warm with my spicy pitas. No dairy and full of fibre and tastiness.

Chana Masala Spice

This is a great combination of spices that you can use in Indian cooking. I tend to buy my spices from the nearest Indian Supermarket as they tend to have all of the spices, they tend to be fresher (due to higher turnover) and they are usually much cheaper than buying from the Supermarket.

This is a great combination of spices that you can use in traditional Indian cooking.
Recipe type: Condiment
Cuisine: Indian
Serves: 20 portions
Ingredients
  • 1 Tbsp cumin seeds
  • 3 Tbsp coriander Seeds
  • 1 Tbsp mango powder
  • 2 tsp cardamon seeds
  • 2 tsp black pepper
  • ½ tsp cloves
  • ½ tsp cinnamon
  • 1 tsp red chilli powder
  • Salt to taste
Instructions
  1. In a pan roast the coriander seeds and cumin seeds until they let off an aroma. Remove from the heat.
  2. Add the coriander seeds and cumin seeds to a mortar and pestle (or grinder) and grind down.
  3. Now add the following to the mortar and pestle (or grinder): mango powder, cardamon seeds, black pepper, cloves, cinnamon, red chilli powder, salt.
  4. Grind all of the ingredients until a fine powder is formed.
  5. Store in an air tight container.

Coconut & Cashew Rice

This is no ordinary fried rice! It’s fluffy, coconut-ey, cashew-ing amazingness. I love this rice as a side or as a quick lunch on it’s own. Generally I serve this rice with Indian and Thai curries, it works just as well with either. Delicious!
