Pimped Up Red Cabbage Slaw

Ingredients
  • ½ Red cabbage
  • 2 carrots grated
  • salt, for seasoning
  • pepper, for seasoning
  • For the dressing:
  • 1 Tbsp dijon mustard
  • 3 Tbsp light mayonnaise
  • 3 Tbsp plain yoghurt
  • 1 Tbsp dijon mustard
  • 1 Tbsp apple cider vinegar
  • Juice of ½ lemon
  • 1 teaspoon honey
Instructions
  1. Wash and finely chop the cabbage.
  2. Grate the carrots and put them in a bowl with the cabbage.
  3. Whisk the dressing ingredients together in a separate bowl.
  4. Mix the dressing into the cabbage and carrot.
  5. Season well.
  6. Chill until ready to eat.
