Chimichurri - An Argentinian delight

Discover how to make a beautiful sauce that can be used as a marinade for vegetables, fish or meat. You can also use it as a delicious spicy condiment for main courses.

Ingredients
  • 1 cup fresh parsley, I use curly parsley
  • ½ cup fresh coriander/cilantro
  • ¾ tsp garlic, minced
  • ¼ cup red wine vinegar
  • ½ cup extra virgin olive oil (I think this makes a superior chimichurri than regular olive oil)
  • ½ red onion
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp chilli flakes
  • salt for seasoning, optional
Instructions
  1. Put all of the ingredients into a food processor and blend until a sauce consistency is achieved.
  2. Season with salt if you want to, but it isn't required.
  3. Store in the fridge until required.
