Amaranth Tabbouleh

Serves: serves 4-6 people
- 1 uCp Dried Amaranth
- 1 handful Chopped Parsley (no stalks)
- 1 handful Chopped Mint (no stalks)
- 4 Spring Onions, white bits chopped into rounds
- ½ Red Onion, finely diced
- Juice of 1 Lemon
- ¼ cup Olive Oil
- 15 Cherry Tomatoes, diced
- ¼ Cucumber, peeled and diced
- 2 Cloves garlic peeled and diced
- Salt for seasoning
- Pepper for seasoning
- Cook Amaranth as per packet instructions (approx. 20 minutes). Once cooked, rinse under cold water and leave to drain.
- Whisk the lemon juice and olive oil and garlic pieces together until thick.
- Put all of the ingredients into a large serving bowl and stir thoroughly.
- Season to taste with salt and pepper.
- Leave in the fridge until ready to serve.
