Discover a quick and easy healthy tabbouleh salad which is made with Amaranth. It is high in protein and packed with energy.

Ingredients
  • 1 uCp Dried Amaranth
  • 1 handful Chopped Parsley (no stalks)
  • 1 handful Chopped Mint (no stalks)
  • 4 Spring Onions, white bits chopped into rounds
  • ½ Red Onion, finely diced
  • Juice of 1 Lemon
  • ¼ cup Olive Oil
  • 15 Cherry Tomatoes, diced
  • ¼ Cucumber, peeled and diced
  • 2 Cloves garlic peeled and diced
  • Salt for seasoning
  • Pepper for seasoning
Instructions
  1. Cook Amaranth as per packet instructions (approx. 20 minutes). Once cooked, rinse under cold water and leave to drain.
  2. Whisk the lemon juice and olive oil and garlic pieces together until thick.
  3. Put all of the ingredients into a large serving bowl and stir thoroughly.
  4. Season to taste with salt and pepper.
  5. Leave in the fridge until ready to serve.
