I love this red cabbage slaw. I use it in so many things, as a side dish on BBQ days or in falafel wraps or as a side to any dish really! It seems to go with anything and everything.
It’s so quick to make but it tastes absolutely delicious. You just need to chop the cabbage, grate the carrots and give the dressing a quick whisk, add it all together, that’s it!
Red cabbage and carrots are both good sources of vitamin C and carrots are a good source beta carotene, which is the antioxidant carotenoid that your body can covert into vitamin A. So, it’s healthy as well as tasty!
Try it with a slice of Potato and cherry tomato tortilla

- ½ Red cabbage
- 2 carrots grated
- salt, for seasoning
- pepper, for seasoning
- For the dressing:
- 1 Tbsp dijon mustard
- 3 Tbsp light mayonnaise
- 3 Tbsp plain yoghurt
- 1 Tbsp dijon mustard
- 1 Tbsp apple cider vinegar
- Juice of ½ lemon
- 1 teaspoon honey
- Wash and finely chop the cabbage.
- Grate the carrots and put them in a bowl with the cabbage.
- Whisk the dressing ingredients together in a separate bowl.
- Mix the dressing into the cabbage and carrot.
- Season well.
- Chill until ready to eat.
